Mimosa Salad
Mimosa Salad is an moderately easy dinner. Made with 1 zucchini or 1 c. broccoli, diced, 1/2 head cauliflower, diced, 1 carrot, diced, 1/2 lb. green beans (italian style is preferable) and 1 can or pkg. canned or frozen baby lima beans, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine all the vegetables and mix in 4 tablespoons mayonnaise, some salt and pepper and as much nutmeg as your palate desires.
More mayonnaise may be added to achieve a creamier texture.
Chill and serve on a lettuce bed with chopped hard-boiled egg.
