Microwave Zucchini
Microwave Zucchini is an easy dinner. Made with 2 lb. small fresh zucchini, 1/3 c. water, 1/2 tsp. salt, 4 tbsp. butter or margarine and 3 tbsp. finely chopped parsley, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Wash zucchini, but do not peel. Cut into 1/4-inch slices. Place zucchini and water in a deep 2-quart heat resistant, non-metallic casserole. Cover and heat on Full power for 7 minutes or until tender. Add remaining ingredients and stir to combine.
Heat, uncovered, on Full power for an additional 2 minutes.
