Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 1/2 c. raw, shelled peanuts (skins on), 1 c. granulated sugar, 1/2 c. light corn syrup, 1/8 tsp. salt and 1 tsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Stir together peanuts, sugar, syrup and salt in 1 1/2-quart microwave-safe container.
Cook 4 minutes on High; stop.
Stir well.
Return to microwave on High for 4 more minutes; stop.
Stir in butter.
Microwave on High 2 minutes longer.
Stir in vanilla. Add baking soda; quickly stir until light and foamy.
Immediately pour out onto a lightly greased surface (baking sheet, marble slab); spread to about 1/4-inch thickness.
When cool, break into pieces.
Store in an airtight container.
Makes 1 pound.
