Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. white corn syrup, 1 c. raw peanuts, 1/8 tsp. salt and 1 tsp. butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Use large capacity microwave.
In a 1 1/2-quart casserole, stir together sugar, corn syrup, peanuts and salt.
Microwave on High for 4 minutes.
Stir again and microwave for 4 more minutes until light brown.
Add butter and vanilla.
Blend well and microwave again for 1 minute (peanuts will be lightly browned and syrup very hot!).
Remove dish from microwave and add baking soda and gently stir until light and foamy.
Pour mixture onto lightly greased cookie sheet or unbuttered nonstick cookie sheet and let cool 1/2 to 1 hour.
When cool, break into small pieces and store in airtight container.
Makes approximately 1 pound.
