Mexican Rice Dish
Mexican Rice Dish is an moderately easy dinner. Made with 1 onion, chopped, 3 tbsp. butter, 1 c. long grain white rice, 2 c. chicken stock and 1 c. white wine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in butter until tender.
Stir in rice and coat with butter.
Add stock, wine and chile peppers.
Bring to a boil and transfer to ovenproof casserole.
Cover and bake at 350° for 15 minutes or until liquid is absorbed.
Remove from oven.
Turn oven up to 400°.
Transfer rice to bowl and add other ingredients. Spoon into liberally buttered baking dish.
Bake uncovered for 20 minutes.
