Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 2 c. long grain rice, 1 tbsp. vegetable oil, 2 c. low-salt chicken stock, tomato sauce and 2 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute rice in oil until lightly browned; place stock and 1/3 cup tomato sauce in water with teaspoon salt.
Add rice.
Bring to boil; cover and reduce heat.
Simmer 30 to 40 minutes until liquid has evaporated.
Serve topped with remaining tomato sauce.
