Mexican Rice is an moderately easy dinner. Made with 2 tsp. vegetable oil, 1 c. uncle ben's converted brand rice, 1/2 c. chopped celery, 1 c. chopped onion and 1 c. chopped green bell pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Add oil, rice, celery, onion, green bell pepper, garlic and cumin to skillet.

Saute over medium heat, stirring constantly, until rice is brown.

Remove from heat.

Combine water and bouillon cubes in medium saucepan; bring to a boil.

Add to rice mixture.

Stir in tomato sauce.

Heat just until mixture simmers. Cover; continue to simmer 20 minutes.

Remove from heat.

Let stand covered 10 minutes before serving.
