Mexican Green Peppers
Mexican Green Peppers is an moderately easy dinner. Made with 6 medium size green peppers, 1 lb. ground beef, 1 large onion, chopped, 1 1/3 c. chopped fresh tomatoes and 1 c. cooked rice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut off tops of green peppers; remove seed.
Cook peppers 5 minutes in boiling water to cover (salt added).
Drain and set aside.
Combine next 7 ingredients.
Mix well.
Fill peppers with meat mixture.
Place in a 2-quart shallow casserole.
Pour tomato sauce over and around the peppers.
Bake at 375Β° for 45 to 50 minutes.
