Mexican Cornbread Casserole
Mexican Cornbread Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1/2 c. onion, chopped, 2 tbsp. jalapeño pepper, chopped, 2 eggs, beaten and 2 c. cream-style corn, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown beef until done.
Drain well.
Add onions and jalapeño peppers.
Set aside.
Mix eggs, milk and 1 cup corn with cornbread mix.
Stir until dry ingredients are moistened.
Pour half of batter into greased 9-inch pan.
Top with beef mixture, cheese slices and remaining cup of corn.
Pour remaining half of batter on top of this and bake at 425° for 25 to 30 minutes.
