Mexican Cornbread Casserole
Mexican Cornbread Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1/4 c. onion, chopped, 2 tbsp. jalapeño pepper, chopped, 2 eggs, beaten and 2 c. cream style corn, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Preheat oven to 425 degrees.
Brown ground meat, drain.
Add onion and pepper, set aside.
Combine eggs, 1 cup corn and milk with cornbread mix.
Stir just till dry ingredients are moistened. Pour 1/2 of batter into greased 9 inch square pan.
Top with beef mixture, cheese slices and remaining cup of corn.
Pour remaining 1/2 of batter on top and bake 25 to 30 minutes.
