Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 1/3 c. yellow cornmeal, 3/4 tsp. baking powder, 1/2 tsp. baking soda, 1 tbsp. flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine all items for cornbread mixture.
Put grease in large skillet (cover bottom).
Heat to 350°.
Saute, with 3 teaspoons bacon fat or grease, a large onion, chopped fine, 3 fresh jalapeño peppers, seeded and chopped and a bell pepper, seeded and chopped fine.
Add 1 pound ground chuck.
Brown all and season with black pepper and salt.
Drain fat.
Pour 1/2 of cornbread mixture into heated skillet.
Add meat mixture.
Add 1/2 pound grated Cheddar cheese.
Top with remaining cornbread mix.
Bake at 350° for 40 to 45 minutes.
