Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. corn meal, 2 eggs, beaten, 1 c. sweet milk, 1 can yellow cream style corn and 1/4 to 1/2 c. bacon drippings, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Brown ground chuck and onion together and drain.
Mix corn meal, eggs, sweet milk, and corn.
Grease 12-inch cast iron skillet with bacon drippings and heat in 350° oven until hot.
Pour hot grease into corn bread mixture, then pour 1/2 of batter in skillet. Sprinkle browned beef and onion and grated cheese evenly over batter in skillet.
Pour rest of batter over the meat and cheese. Bake for 50 minutes.
(Good with green salad or pinto beans.)
