Mexican Corn Bread

Grate Cheddar cheese; chop onion and jalapeño peppers; brown beef and drain well.
Mix and set aside: cornmeal, eggs, corn, milk, bacon drippings (very essential for flavor), salt and soda. Preheat oven to 325°.
Grease bottom of cast-iron skillet; cover bottom with corn meal and brown slightly on top of stove.
Pour 1/2 batter into skillet; layer cheese, meat, onions and peppers. Cover with remaining batter and bake 45 to 50 minutes.
