Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 can ro-tel, crushed, 2 c. elbow macaroni, 1 c. taco cheese, shredded, 1 c. refried beans and 1 lb. ground chuck, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown ground chuck with 1/2 package of fajita mix and 2 tablespoons water. Smooth refried beans over bottom of casserole dish, then add cooked macaroni and Ro-Tel. Spread ground chuck over top, then sprinkle cheese over hot meat to melt.
Serve with shredded lettuce, onions and tortilla chips.
