Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 4 lb. ground chuck, 2 large onions, diced, 3 (10 3/4 oz.) cans cream of chicken soup (undiluted), 3 (10 oz.) cans diced tomato and green chilies and 2 (15 oz.) cans ranch style beans*, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook ground chuck and onion in a Dutch oven, stirring until meat crumbles and is no longer pink.
Drain meat mixture; return to Dutch oven.
Stir in soup, diced tomato and green chilies and beans.
Layer half of tortillas evenly into 2 lightly greased 13 x 9-inch baking dishes.
Top each with 1/4 of meat mixture and 1/4 of cheese cubes.
Repeat layers with remaining tortillas, meat mixture and cheese.
Bake at 350Β° for 40 minutes or until cheese is melted.
