Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 lb. ground beef or chuck, 1 medium onion, chopped, 1/2 tsp. salt, 1/4 tsp. pepper and 1 can enchilada sauce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Fry together ground meat and onion until all pink disappears and onion is clear.
Add the enchilada sauce.
Mix together the soup, water and chilies (if used).
Break tortillas into several pieces.
In a 2-quart casserole, put a layer of tortillas, meat mixture, soup mixture and cheese.
Repeat layers, ending with cheese.
Refrigerate overnight or all day.
Bake at 350Β° for 1 hour.
