Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 c. canned kidney beans, rinsed, 1 onion, chopped, 1 clove garlic, minced, 5 to 6 mushrooms, sliced and 1 green pepper, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion, garlic, mushrooms and pepper.
Add the beans, tomatoes and spices.
Simmer gently for about 30 minutes.
Mix Cheddar cheese and yogurt.
In a 1 1/2-quart casserole, place a layer of sauce, 1 1/2 tablespoons of grated Mozzarella cheese and 4 tablespoons of cheese-yogurt mixture.
Repeat until all ingredients are used, ending with a layer of sauce.
Top with cheese-yogurt mixture.
Bake at 350Β° for 15 to 20 minutes.
