Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 lb. hamburger, 1 large can ranch style beans, 16 oz. velveeta cheese, 1 small onion, chopped and 2 (10 oz.) cans whole ro-tel tomatoes and green chilies, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry the hamburger and onion together. Drain.
Add beans.
In another pan, heat together the Ro-Tel tomatoes and soup.
Place tostada shells in greased 9 x 13-inch dish. Spread meat and bean mixture over shells.
Add half soup mixture.
Slice Velveeta cheese over soup mixture. Repeat layers.
Bake at 300Β° for 30 to 45 minutes until done. Serve with green salad.
