Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 2 large onions, chopped, 3 cans cream of mushroom soup, 3 cans ro-tel and 2 cans ranch style beans, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook ground beef and diced onion.
Drain meat mixture and return to pan.
Stir in mushroom soup, Ro-Tel, and beans.
Layer half of the tortillas evenly into 2 lightly greased 13 x 9-inch baking dishes. Top each with 1/4 of meat mixture and 1/4 cheese. Repeat layers with remaining tortillas, meat mixture, and cheese. Bake at 350Β° for 30 minutes or until cheese is melted.
