Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 lb. ground meat, 1 medium onion, 1 medium green pepper, salt (optional) and pepper (optional), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion and pepper until tender in small amount of oil. Add meat and cook until it stands apart.
Add mushroom soup, enchilada sauce, Ro-Tel and green chili pepper.
Cook a few minutes.
Layer it in large casserole dish with corn tortillas and Cheddar cheese.
Bake at 350Β° until it bubbles in the center.
