Beat egg whites until foamy.

Add cream of tartar, salt and vanilla.

Beat until stiff and dry.

Add sugar and continue beating until sugar has dissolved.

On an oiled baking sheet, spoon mixture into a 9-inch round.

With spoon, push sides up around circle like center is shelled out so sides are at least 1-inch high.

Bake at 275Β° until almost tinted.

Turn off heat and leave in oven for 10 to 15 minutes.

Cool slightly before removing from pan.

Fill with prepared lemon, chocolate or butterscotch pie filling.
