Meaty Vegetable Chili
Meaty Vegetable Chili is an moderately easy dinner. Made with 1 lb. beef stew meat, cut into 1/2-inch cubes, 1/2 lb. boneless chicken, cut into 1/2-inch cubes, 1 to 2 tbsp. cooking oil, 3 1/2 c. water and 3 medium carrots, cubed, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large Dutch oven, brown beef and chicken in oil over medium-high heat.
Drain.
Add water, carrots, zucchini, tomatoes, onion, turnip and pepper; bring to a boil.
Reduce heat, cover and simmer for 1 hour or until beef is tender.
Add beans and chili sauce; simmer 15 minutes longer.
Makes 4 quarts.
