Meatless Chili
Meatless Chili is an moderately easy dinner. Made with 2 tbsp. oil, 1 1/4 c. chopped onion, 2 cloves garlic, minced, 2 tbsp. chili powder and 1/4 tsp. oregano, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In a large saucepot, heat vegetables and oil over medium heat. Add onion, garlic, chili powder, basil, oregano and cumin.
Cook, stirring until onion is tender.
Add zucchini and carrots, cook stirring 1 or 2 minutes.
Stir in tomatoes, chickpeas and kidney beans.
Bring to a boil.
Reduce heat and simmer 30 minutes to 35 minutes.
Makes 6 servings.
