Matt's Potato Soup
Matt'S Potato Soup is an easy dinner. Made with 5 c. sliced potatoes (raw), 1 medium onion, 2 tsp. salt, 3 tbsp. butter and 2 2/3 c. milk (use judgement), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Put potatoes and onion into 3-quart saucepan and barely cover with cold water.
Add salt.
Cover tightly and heat to boiling. Reduce heat and simmer for 10 minutes or until potatoes are perfectly tender.
Mash potatoes in their liquid.
Add butter and enough milk to give desired thickness.
Reheat to scalding, then remove from heat.
