Marinated Zucchini
Marinated Zucchini is an moderately easy dinner. Made with 1 large zucchini squash or several smaller ones, salt, 6 tbsp. olive oil, 1 tbsp. water and 2 cloves garlic, mashed, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut unpeeled zucchini into 1/2-inch thick slices.
Spread slices on paper towels and sprinkle both sides lightly with salt. Let stand 30 minutes.
Rinse with water and dry.
Dice zucchini slices into quarters.
Heat oil in heavy frying pan.
Add squash and coat well with oil.
Add water and garlic.
Cover pan; reduce heat and simmer until just tender.
Should still be crunchy.
