Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 small green pepper, 1 medium onion, 1 can tomato soup and 3/4 c. oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Slice and cook carrots; drain and place in layers in glass roasting pan or large Corning pan.
Top with thinly sliced onion and green pepper.
Repeat layering.
