Maple Stuffed Sweet Potato
Maple Stuffed Sweet Potato is an moderately easy dinner. Made with 8 (4 oz.) sweet potatoes, 6 tbsp. plain nonfat yogurt, 2 tbsp. light maple syrup, 2 tbsp. orange juice and 1 tbsp. dijon mustard, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 375Β°.
Bake potatoes 50 to 60 minutes or until easily pierced with a fork.
Remove from oven and cool slightly. Slice potatoes in half lengthwise.
Scoop out pulp, leaving a 1/2-inch thick shell.
Place shells in 13 x 9-inch pan and transfer pulp to a food processor or blender.
Add remaining ingredients and process or blend until smooth.
Spoon mixture evenly into shells.
Return to oven and bake 5 to 10 minutes longer, until heated.
Especially good at Thanksgiving.
