Mandarin Orange-Sweet Potato Casserole
Mandarin Orange-Sweet Potato Casserole is an moderately easy dinner. Made with 3 to 4 lb. sweet potatoes, 1 c. packed brown sugar, 1 1/2 tbsp. cornstarch, 1/4 tsp. lite salt and 1 1/2 tsp. ground cinnamon, this recipe delivers authentic, satisfying flavors. Boil potatoes and set aside.
Combine sugar, cornstarch, lite salt and cinnamon in saucepan.
Add apricot nectar and orange peel.
Bring to a boil, stirring constantly.
Remove from heat. Stir in butter.
Pour sauce over sliced, peeled potatoes and mandarin oranges that have been placed in a casserole dish (9 x 13-inch) sprayed with nonfat cooking spray.
Sprinkle Grape-Nuts on top.
Bake at 350Β° for 25 minutes.
