Maine Custard Pie
Maine Custard Pie is an moderately easy dinner. Made with 2 1/2 c. milk, 1 egg, separated, 1/2 c. sugar, 1 tsp. vanilla and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Warm but don't scald milk.
Separate egg and beat the white stiffly.
Beat in sugar, vanilla, salt and nutmeg.
Combine egg yolk with 3 eggs.
Stir gently and pour over beaten egg white. Beat slightly, only enough to blend.
Then add warm milk, stirring until sugar seems dissolved.
Pour into unbaked pie crust and place in preheated 475° oven and turn heat down to 425°.
Bake for 30 minutes.
