Luby's Date Nut Muffins(Moist and Delicious!)
Luby'S Date Nut Muffins(Moist And Delicious!) is an moderately easy dinner. Made with 1 c. chopped dates, 1 tsp. soda, 1 c. boiling water, 1/2 c. butter and 1 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350°. In a bowl, pour boiling water over dates and baking soda.
Set aside to cool.
In another bowl, cream butter and sugar until fluffy.
Add the egg and beat lightly. Then add vanilla, flour and pecans, one at a time.
Mix well after each addition.
Add cooled dates, water and baking soda.
Mix thoroughly.
Pour into muffin pans which have been sprayed with Pam, greased or lined with paper cupcake liners.
Bake at 350° for 20 to 25 minutes or until toothpick comes out clean.
Don't overbake.
Makes 12 to 18 muffins.
