London Broil Pinwheels
London Broil Pinwheels is an moderately easy dinner. Made with 1 (2 lb.) beef flank steak, 1 large garlic clove, crushed, 1 c. dry sherry, 1/2 c. soy sauce and seasoned meat tenderizer, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Pound flank steak with meat mallet until 1/2-inch thick. Sprinkle with tenderizer, garlic and green onions.
Roll up, lengthwise, jelly-roll fashion.
Cut roll into 8 slices and spear each slice on a skewer.
Place skewers into a shallow dish.
Mix sherry, soy sauce and tomato paste until smooth; pour over meat. Turn skewers and marinate at room temperature for 2 hours.
Drain skewers and reserve marinade.
