Lobster Newburg
Lobster Newburg is an moderately easy dinner. Made with 1/4 c. butter or margarine, 2 tbsp. flour, 1 1/2 c. light cream, 3 egg yolks, beaten and 2 (5 oz.) cans lobster, drained, broken into large pieces and cartilage removed, this recipe delivers authentic, satisfying flavors. Melt butter in a pan; blend in flour and add cream all at once. Cook and stir until thickened and bubbly.
Stir about half the hot mixture into egg yolks; return to hot mixture.
Cook and stir until thickened, but do not boil.
Add lobster; heat through.
Stir in wine, lemon juice and salt.
Sprinkle with paprika; spoon into patty shells.
Serves 4.
