Lima Stew with Meatballs
Lima Stew With Meatballs is an moderately easy dinner. Made with 1 c. large dry lima beans, 4 1/2 c. water, 1/4 c. flour, 1/2 c. cold water and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Rinse beans.
Place in Dutch oven.
Add the water and boil 2 minutes.
Cover; let stand 1 hour (or soak overnight).
Do not drain.
Combine flour and cold water.
Stir into beans.
Cook until thickened and bubbly.
Add vegetables.
Fry beef with onion. Add to beans and vegetables.
Add tomato sauce.
Salt and pepper to taste.
Place bay leaf in bottom of casserole.
Spoon mixture into dish.
Cover and bake in 375Β° oven for 1 1/2 to 2 hours. Stir occasionally.
