Light Yeast Biscuits

In a small bowl, dissolve 1 tablespoon sugar in the warm water, then add yeast.
In a large bowl, combine the remaining 1 tablespoon sugar, flour, baking powder, baking soda and salt. Using a pastry blender or two knives, cut butter into dry ingredients until mixture resembles coarse cornmeal.
Add buttermilk and yeast mixture to dry ingredients and stir until a soft dough forms.
Turn onto a lightly floured surface and knead 4 minutes or until dough becomes smooth and elastic.
Place in a large bowl; spray with cooking spray, turning once to coat top of dough.
