Light And Lively Chicken And Rice is an moderately easy dinner. Made with 4 chicken breast halves, 1/3 c. bottled italian salad dressing, 2/3 c. uncooked regular rice, 1 (16 oz.) bag dutch mix frozen vegetables and 1 can durkee french fried onions, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place chicken breasts in an 8 x 12-inch baking dish.
Pour salad dressing over chicken.
Bake, uncovered, at 400Β° for 20 minutes.
Place rice, vegetables and 1/2 can French fried onions around and under chicken.
Combine bouillon and Italian dressing; pour over chicken and vegetables.
Bake, uncovered, 25 minutes. Top with remaining onions.
Bake 2 to 3 minutes longer.
Let stand 5 minutes before serving.
(I find it's better to place chicken on top of rice, then onions, vegetable bouillon and seasoning.)
