Lentil Soup
Lentil Soup is an moderately easy dinner. Made with 1 lb. lentils, 1 large onion, chopped fine, 4 ribs celery, finely chopped, 3 carrots, shredded and 1 small bay leaf, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sort and wash lentils well.
Cover with water and soak overnight.
Drain and in a large pot, add all ingredients except smoked sausage and potatoes.
Bring to boil.
Lower heat and simmer, covered.
Slice sausage about 1/4-inch thick and then cut the slices in quarters.
Lightly brown in frying pan.
Drain off fat and add sausage to soup.
Simmer about 2 1/2 hours, covered. Remove bay leaf and add potatoes.
Simmer about 1 hour more.
