Lentil Salad

Made with 1 ( 16 oz.) pkg. lentils, 1 c. finely chopped onions (or more, if desired), 3 tbsp. prepared mustard, juice of 1 or 1 1/2 lemons and tarragon vinegar (to achieve desired acidity), this recipe delivers authentic, satisfying flavors. Check lentils and remove any little stones.
In a 4-quart saucepan, wash lentils several times in 2 quarts of cold water to skim off debris.
Use same saucepan to soak lentils overnight in 2 quarts of cold water.
