Lentil Loaf
Lentil Loaf is an moderately easy dinner. Made with 1 c. lentils, 4 c. water, 1 c. bread, cracker crumbs (wheat germ may be used), 2 eggs, beaten and 1/3 to 1/2 c. catsup, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Add lentils and barley to boiling, salted water.
Allow to boil for a minute, then reduce heat and simmer with lid ajar for about 40 minutes or until most of the water is absorbed.
Add all of the remaining ingredients and mix well.
Place mixture in 9 x 5 x 3-inch loaf pan.
Bake at 350Β° for 35 minutes.
Allow to cool 15 to 20 minutes before inverting over a platter to serve.
Great cold for sandwiches.
