Lenten Stuffing (Meatless)(Hashwi Bedoun Laham) is an moderately easy dinner. Made with 1/2 c. chickpeas, soaked overnight, 1 1/2 c. rice, washed and drained, 1/2 c. parsley, finely chopped, 1/2 c. green onions, finely chopped and 2 tbsp. fresh mint, chopped, or 1 tbsp. dry, this recipe delivers authentic, satisfying flavors. Drain chickpeas and place on tea towel.
Roll over with a rolling pin to crack the skin.
Place in a mixing bowl with 3 to 4 cups of water.
Remove the skin that floats to the top and discard.
Drain.
Add all remaining ingredients.
Mix well.
