Lemon-Tarragon Chicken
Lemon-Tarragon Chicken is an moderately easy dinner. Made with 4 boneless, skinless chicken breasts, 2 tbsp. flour, 1 1/2 tsp. tarragon, 2 cloves garlic and 1 small jar pimentos, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Flatten or cut the chicken breasts into strips.
Dredge chicken lightly in flour, tarragon , salt and pepper.
Melt a small amount of oleo in pan.
Saute garlic and add chicken, cook for 5 minutes.
Add pimentos, mushrooms and artichokes; simmer about 5 minutes.
Add enough cornstarch and water thickener to make sauce; add juice of 1 lemon.
Serve over rice or noodles.
