Combine sugar, flour, melted butter, salt and egg yolks.
Beat until smooth.
Beat in lemon juice and peel.
Add milk, beating slowly.
Beat egg whites until stiff.
Fold in.
Bake pie shell in a 350° oven for 5 minutes.
Pour in filling.
Bake 40 minutes at 350° or until filling is firm.
