Lemon Sponge Pie
Lemon Sponge Pie is an moderately easy dinner. Made with 3 tbsp. margarine, 1 c. sugar, 3 eggs, 1 tsp. lemon rind and 1/4 c. lemon juice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Bake the pie shell in a 425° oven for 5 minutes.
Remove from oven and cool while preparing filling.
Lower heat to 325°.
Cream the margarine with the sugar.
Beat in the egg yolks, rind, juices, flour and milk.
Beat the egg whites to soft peaks and fold into the lemon mixture.
Pour into the partially baked shell and bake at 325° for 55 minutes or until top is firm and golden.
