Lemon Rice Pilaf
Lemon Rice Pilaf is an moderately easy dinner. Made with 5 tbsp. olive oil, 1 1/2 c. minced onion, 3 c. long grain white rice, 3 (14 1/2 oz.) cans chicken broth and 1/2 c. fresh lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oil in heavy large saucepan over medium heat. Add onion and saute until tender, about 10 minutes.
Add rice and saute for 2 minutes. Add remaining ingredients and bring to a boil, stirring occasionally. Reduce heat to low.
Cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, for 5 minutes.
Season to taste with salt. Makes 6 servings.
