Lemon Rice
Lemon Rice is an impressive dinner you can prepare in about 1 hour 18 minutes. Made with c. sliced celery, small onion, chopped, c. plus 2 tbsp. butter or margarine, melted and divided, c. water and . grated lemon rind, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute celery and onions in 3 tablespoons butter in a large skillet.
Stir in water, lemon rind, lemon juice, thyme, salt and pepper; bring to a boil.
Add rice.
Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.
Saute mushrooms in remaining butter in a small skillet until tender; drain.
Add mushrooms to rice mixture; stir well.
Makes 10 servings.
