Lemon Pie
Lemon Pie is an moderately easy dinner. Made with 3 tbsp. cornstarch, 1 1/4 c. sugar, 1/4 c. lemon juice (1 lemon), 1 tbsp. grated lemon rind and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine cornstarch, 1 1/4 cups sugar, lemon juice and rind. Add egg yolks and mix together. Gradually add boiling water.
Heat to boiling over direct heat, then boil gently for 4 minutes, stirring constantly.
Pour into baked crust.
Beat egg whites until a little stiff.
Add a pinch of cream of tartar. Continue beating until stiff. Add 4 to 6 tablespoons sugar.
Spread on pie. Bake at 350Β° until brown.
