Lemon Pie
Lemon Pie is an moderately easy dinner. Made with 3 tbsp. cornstarch, 1 1/4 c. sugar, 1/4 c. lemon juice, grated rind of 1 lemon and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine cornstarch, 1 1/4 cups sugar, lemon juice, lemon rind and salt.
Beat egg yolks.
Add to dry mixture.
Gradually add boiling water.
Heat to boiling over direct heat.
Boil gently for 4 minutes, stirring constantly.
Pour into pie shell.
Beat egg whites until stiff but not dry.
Gradually beat in 6 tablespoons sugar.
Spread meringue over top of pie to touch all edges of crust.
Bake at 425Β° for 4 to 5 minutes.
Cool on a cake rack. Serve cold.
