Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 3 tbsp. cornstarch, 3 tbsp. flour, dash of salt and 1 1/2 c. hot water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In saucepan, mix sugar, cornstarch, flour and salt.
Gradually add hot water, stirring constantly.
Cook and stir over high heat until mixture comes to a boil.
Reduce heat.
Cook and stir 2 minutes longer.
Remove from heat.
Stir small amount of hot mixture into egg yolks, then return to hot mixture.
Bring to boil and cook 2 minutes, stirring constantly.
Add butter and lemon peel.
Slowly add lemon juice, mixing well.
