Lemon Meringue Pie is an moderately easy dinner. Made with 2/3 c. cornstarch, 2 1/4 c. sugar, 1/2 tsp. salt, 3/4 c. fresh lemon juice and 2 1/4 c. water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix cornstarch, sugar and salt in pan.
Stir in water.
Cook, stirring until smooth and thick.
Remove from heat and add to beaten yolks.
Cook 1 minute.
Remove and add butter and lemon juice.
Cool and pour into baked pie shell.
Top with meringue and place under broiler until light brown.
