Lemon Meringue Pie is an moderately easy dinner. Made with 4 egg whites, 1 c. sugar, 1 tsp. vanilla, 1/2 tsp. vinegar and 1/2 tsp. gelatin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix lemon juice with 1/2 of the sugar.
Cook with the slightly beaten egg yolks in double boiler until it thickens.
Add gelatin and cool.
Add the whites beaten with the remainder of the sugar, folding the whites in carefully.

Top with whipped cream.
Keep in the refrigerator until served.
