Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/3 c. cornstarch, 1 1/2 c. water, 3 egg yolks, slightly beaten and 3 tbsp. butter, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix in saucepan the sugar and cornstarch.
Stir water in gradually.
Cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil 1 minute, then slowly stir at least half of the hot mixture into the 3 beaten egg yolks.
Blend back into hot mixture in saucepan.
Boil 1 minute longer, stirring constantly.
Remove from heat.
Continue stirring until smooth and blend in the butter, lemon juice and lemon rind.
